This is what the pocket app doesn't carry. The kiosk knows whether the operator in front of it is competent for the line — it plays the SOP, runs a short food-safety test, grades it on the spot, and updates their competency before they touch the task. Training stops being a binder in the office and becomes part of starting the job.
